Cheesy Pull Apart Garlic Bread

There’s a version of comfort food that doesn’t need a recipe card; it just needs butter, garlic, and a willingness to get your hands messy.

This cheesy pull-apart garlic bread is exactly that for me. I made it on a random Tuesday for no reason at all and somehow it turned into the whole point of dinner.

Cheesy, garlicky, kind of nostalgic in a way I can’t fully explain, and gone in about ten minutes flat.

Ingredients

Nothing fancy here. Just a handful of stuff you probably already have hanging around your kitchen, honestly. The real magic is in the garlic butter and the cheese so don’t skimp on those two. Here’s what you need.

  • 1 round loaf of bread
  • ½ cup melted butter (125 g)
  • 3 garlic cloves, minced or pressed
  • 2 cups grated cheese (mozzarella, cheddar, or a mix) (250 g)
  • 2 tbsp chopped fresh parsley (8 g)
  • 1 tsp Italian herbs, optional (oregano, basil) (1 g)
  • ½ tsp salt (3 g)

A little note, I usually go half mozzarella half cheddar because I like that stretchy but also sharp combo going on. Mozzarella by itself is great too. Just a touch milder is all.

How to Do It

Okay let’s get into it. Grab your loaf. Here we go!

Prep the Bread

Preheat your oven to 350°F, or 180°C, so it’s ready when you need it. Then, using a serrated knife, you’ll want to cut deep crisscross slits into the loaf. Kind of like making little squares. Don’t cut all the way through though! Leave that bottom part intact so the whole thing holds together as one piece, this matters a lot.

A note here, a bread knife works so much better than a regular knife for this part. The sawing motion helps you get clean cuts and you won’t end up squashing your poor loaf.

Make the Garlic Butter

In a small bowl, stir together the melted butter, your minced garlic, the salt, parsley, and Italian herbs if that’s your thing. Mix it well. Everything should be combined and your kitchen is probably smelling incredible right about now.

Stuff the Bread

Grab a spoon or a brush, whichever you’ve got, and work that butter mixture down into every cut. Don’t hold back, really get in there. After that’s done, pack the grated cheese into those same cracks. Try to spread it evenly so every single bite gets its fair share.

I like to gently fan the loaf open a little with my fingers while I’m doing this part. It makes it way easier to get cheese down deep instead of it just sitting on top, trust me on this one.

Bake It

Wrap the whole loaf in foil. Bake for 10 to 15 minutes like that. Then carefully unwrap it and let it go uncovered for another 5 to 7 minutes, until the cheese turns melted, bubbly, and that gorgeous golden color shows up on top.

Serve and Enjoy

Pull it out while it’s still hot. Just go for it honestly, pull it apart right there with your hands at the table.

No slicing needed, no plates really, just grab a big pile of napkins and you’re set. Enjoy every cheesy garlicky bite of this thing!

Instructions
 

  • Preheat oven to 350°F (180°C).
  • Using a serrated knife, make deep crisscross cuts in the loaf, leaving the base intact.
  • In a small bowl, mix melted butter, garlic, salt, parsley, and Italian herbs (if using).
  • Use a spoon or brush to spread the butter mixture into all the cuts.
  • Pack grated cheese into the cracks, making sure it’s evenly distributed.
  • Wrap the loaf in foil and bake for 10–15 minutes.
  • Unwrap and bake for an additional 5–7 minutes, until cheese is melted and golden.
  • Serve hot and pull apart by hand – no slicing needed!
