Chocolate-Covered Banana Pops

We saw these at my niece’s birthday party last month and I’ve been making them every few weeks ever since. These chocolate banana pops are way easier than I even thought they’d be! You literally just stick bananas on popsicle sticks and dip them in chocolate, then add sprinkles on the top or whatever other toppings you want.
Takes maybe 15 minutes not counting the freezing part. The chocolate gets hard in the freezer and makes them crunchy on the outside. Bananas stay soft and cold inside which is a nice combo. I like that they feel like a special treat but they’re really just fruit covered in chocolate. My daughter calls them fancy bananas and asks for them all the time now. You probably have everything you need already in your kitchen.
Ingredients

- 4 bananas
- 12 oz chocolate chips
- 2 tbsp coconut oil
- Sprinkles (or any toppings you like)
How to do it
Step 1: Prep the bananas

Peel the bananas. Cut them in half so you get 8 pieces total.
Step 2: Add the sticks

Take a lollipop stick or popsicle stick. Push it into the bottom of each banana piece about one inch deep. Not too far or it comes out the top! Not too little or it falls off when you dip it.
Step 3: Melt the chocolate

Put chocolate chips in a bowl that’s microwave safe. Microwave for about 1.5 to 2 minutes but stop every 30 seconds to stir it. This is important or the chocolate burns! I burned mine once and it tasted gross so don’t skip the stirring part.
Step 4: Add the coconut oil

Your chocolate is melted now. Mix in the coconut oil and let it melt into the chocolate. Stir everything together. The coconut oil makes the chocolate smooth and easier to dip with.
Step 5: Dip the bananas

Dip each banana in the chocolate now. You can cover it all or just do half if you want! I tilt the bowl and roll the banana around to get chocolate on it. Put each one on a plate or baking sheet with parchment paper after you dip it.
Step 6: Add your toppings
Sprinkle stuff on top while the chocolate is still wet! Sprinkles are fun and colorful. You can use nuts or coconut or mini chocolate chips or whatever. Work fast because the chocolate gets hard pretty quick.
Step 7: Freeze and enjoy

Stick them in the freezer for at least an hour until they’re frozen. Then you can eat them or keep them in a freezer bag for later! They’re really good when you want something cold and sweet. Also, freezing part is not a must. You can choose to stick them in the fridge instead, until chocolate is solid – that’s totally up to you.

- Melt the chocolate for about 1.5-2 minutes, but make sure to check and stir every 30 seconds.
- Then mix in the coconut oil and let it melt.
- Dip each banana in the chocolate and set aside.
- Sprinkle with sprinkles, or any toppings you like.
- Stick them in the freezer for at least an hour until they’re frozen. Then serve and enjoy!
