St Patrick’s Day Jello Cups

Okay so today we’re talking green jello cups with fluffy whipped cream layers! You can see through the glass and all the pretty green and white stripes show. No oven needed which, no bake desserts always make me so happy.

Sometimes the simplest desserts make the biggest impact on people, and such is the case with these St. Patrick’s Day green jello cups/parfaits. It’s just lime jello from a box and you whip up some cream. That’s it. But they look like you spent hours making fancy dessert. The layers are what make them so special looking – green then white then green then white!

Hour total but honestly you’re not doing anything most of that time. Just waiting around for jello to set while you watch TV or whatever. Real work? Fifteen minutes tops. Make them the night before a party and you’re ready for St. Paddy’s!

Ingredients

  • 1 box lime gelatin, 6 oz or 170 g
  • 2 cups boiling water (480 ml)
  • 2 cups cold water (480 ml)
  • 1 ½ cups heavy whipping cream (360 ml)
  • 3 tablespoons powdered sugar
  • For top: green sprinkles or lime zest or green candy crushed up

Makes 6. Prep 15 minutes. Chill 30 to 45. About 1 hour total.

How to Do It

Prepare the Gelatin

Medium bowl out. Lime gelatin and boiling water mixed. Stir until dissolved all the way. Chunks are bad! Add cold water now and mix. Room temperature before you use it so let it cool down.

Chill the First Layer

Thin gelatin layer in each glass bottom. Parfait glasses are best because layers show through. Fridge time 20 to 30 minutes. Set but still wobbly a bit when touched.

Make the Whipped Cream

Get a mixing bowl. Heavy whipping cream and powdered sugar beat together. Until soft peaks. Don’t beat too much or butter happens!

Assemble the Parfaits

Whipped cream spooned over the jello that’s set. Piping bag if you got one. Layers now! Gelatin then cream then gelatin then cream again. Until full glasses. Top layer is whipped cream.

Decorate and Serve

Sprinkles that are green on top! Lime zest works if fancy. Green candy crushed too. Cold from fridge when serving.

Ingredients
  

  • 1 box lime gelatin 6 oz / 170 g
  • 2 cups boiling water 480 ml
  • 2 cups cold water 480 ml
  • 1 ½ cups heavy whipping cream 360 ml
  • 3 tablespoons powdered sugar
  • Optional toppings: green sprinkles lime zest, or crushed green candy

Instructions
 

  • In a medium bowl, combine the lime gelatin with boiling water. Stir until completely dissolved.
  • Add the cold water, mix well, and allow the mixture to cool to room temperature.
  • Pour a thin layer of gelatin into the bottom of each parfait glass.
  • Refrigerate for 20–30 minutes until just set but still slightly wobbly.
  • In a mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.
  • Spoon or pipe a layer of whipped cream over the set gelatin.
  • Repeat layers of gelatin and whipped cream until the glasses are filled, finishing with whipped cream on top.
  • Top with green sprinkles, lime zest, or crushed candy. Serve chilled.
