How to Make It

Now the fun part. This is one of those recipes that’s as satisfying to make as it is to eat. There’s some therapeutic magic in pressing oats into muffin cups with your fingers!

Step-by-Step: Granola Berry Cups

  • Mash and mix.
    Peel your banana, break it up, and mash it in a bowl until it’s as smooth as you can get it. Add the rolled oats and honey, and mix until everything is sticky and well blended.
  • Shape the cups.
    Grab your muffin tin (six-cup size is perfect). Scoop the oat mixture evenly into each cup. Now—here’s the fun, slightly messy part—use your fingers or the back of a spoon to press the mixture down and up the sides. Try to make the shape of a little bowl or cup. The walls should be about a quarter-inch thick. If it all sticks to your hands, wet your fingers just a bit.
  • Freeze to set.

Instructions
 

  • In a medium bowl, mash the banana.
  • Add the oats, and honey to the mashed banana and mix until well combined.
  • Add the mixture to a muffin pan and divide over 6 cups. Push the mixture to the edges and bottom, so that you are creating a cup.
  • Freeze the muffin tray for 30 minutes.
  • Preheat the oven to 350 degrees and bake the cups for 30 minutes. Then remove from the oven and let cool off for 10 minutes.
  • Add the yogurt and berries to each cup and serve immediately.
