Chocolate Covered Strawberries

Okay so chocolate covered strawberries are one of those things that seem fancy but they’re actually super easy. I’m talking like 5 minutes of actual work here! The rest is just waiting for chocolate to harden in the fridge.
These can be made vegan too which is super cool because nobody can even tell the difference, they just taste like regular chocolate covered strawberries.
I make these every Valentine’s Day now. They look impressive when you bring them to a party or give them as a gift! Now I honestly prefer this version because the coconut oil makes the chocolate so smooth and shiny. It’s way better than the stuff you get from the store.

Oh, and – only three ingredients. You probably already have chocolate chips and coconut oil at home anyway! Just grab some fresh strawberries and you’re totally good to go.
Ingredients

- 1 lbs. fresh ripe strawberries – Make sure they’re actually ripe and red, not those pale pink ones that taste like nothing. I always pick through them at the store to find the best looking ones! Also they need to be completely dry before you dip them, otherwise the chocolate won’t stick right.
- 5 oz chocolate chips – Any chocolate chips work for this. You can choose vegan too, which is my personal preference. I use Enjoy Life brand most of the time because they’re easy to find. Sometimes I grab the Trader Joe’s ones if I’m there anyway!
- 2 tbsp coconut oil – This is the secret ingredient that makes everything smooth and glossy. Regular coconut oil from a jar works perfect! You don’t need the fancy refined kind or anything. It helps the chocolate melt easier and makes it look all professional and shiny when it hardens.

How to do it
1. Melt the chocolate: Put your chocolate chips and coconut oil together in a microwave-safe bowl. Microwave them for about 2 minutes total, or until everything’s melted. I usually check it after a minute and give it a stir, then keep going! Once it’s all melted, whisk it together really well so the coconut oil and chocolate combine into one smooth mixture.

2. Dip the strawberries: Now comes the fun part. Take each strawberry by the green stem part and dip it into your melted chocolate! Try to keep those green stems clean and chocolate-free, it looks prettier that way. You can do a full dip or just dip them halfway, whatever you like better.

3. Let them drain and top with sprinkles: Put your dipped strawberries on a wire rack with some parchment paper underneath to catch drips. The wire rack lets air get under them so the bottoms dry too! If you don’t have a wire rack just use a baking sheet with parchment paper, that works fine too. If using sprinkles, sprinkle them on the chocolate-dipped strawberries now.

4. Refrigerate: Stick the whole thing in the fridge for at least 30 minutes. This is when the chocolate gets hard and sets up nice. Sometimes I leave them in there longer if I’m making them ahead of time, which is totally fine!

5. Serve and enjoy: Once that chocolate is hard, they’re ready to eat! You can serve them right away or keep them in the fridge until you need them. I wouldn’t make these more than a day ahead though because strawberries get weird and watery if they sit too long. Eat them within a day or two for best results!

Chocolate Covered Strawberries
Ingredients
- 1 lbs. fresh ripe strawberries
- 5 oz chocolate chips you can choose vegan
- 2 tbsp coconut oil
- colorful sprinkles optional
Instructions
- Melt the chocolate chips and the coconut oil in the microwave for about 2 minutes, or until melted. Whisk together until well combined.
- Dip each strawberry in the melted chocolate, make sure to keep the green stems clean.
- Let them rest on a wired tray with parchment paper to catch the dripping chocolate. If using sprinkles, sprinkle them on the strawberries now.
- Put them in the fridge to let the chocolate harden for at least 30 minutes.
- Once the chocolate has hardened, enjoy, or keep refrigerated.
