St Patrick’s Day Green Pancakes

Green pancakes for St Patrick’s Day, anyone? Don’t mind if I do. So simple – just regular pancake batter with food coloring in it. It’s such a fun breakfast or brunch idea for St Paddy’s Day, especially if you have kids – they tend to lose their minds over these. Whipped cream on top and green sprinkles to make it extra special.

I made for a few years on St Patrick’s morning, and it just hits different than your regular pancakes. They’re fluffy and yummy. The green just makes breakfast way more fun!

Ingredients

For the pancakes:

  • 1 ½ cups flour, the all-purpose type
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups milk or non-dairy works too
  • 1 tablespoon vinegar, white kind
  • 1 egg, big size
  • 2 tablespoons oil, vegetable
  • 1 teaspoon vanilla
  • Green food coloring

For the toppings:

  • Whipped cream, store kind or make your own
  • Green sprinkles for festive

Serves 4. About 8 pancakes. Prep 10 minutes. Cook 15. Total 25.

How to Do It

Make the Buttermilk

Small bowl. Milk and vinegar mixed together. Sit for 5 minutes. Thicker and makes buttermilk effect. Good for fluffy pancakes!

Mix Dry Ingredients

Big bowl time. Flour, sugar, baking powder, baking soda, salt. Whisk them all together.

Mix Wet Ingredients

Another bowl now. Buttermilk mixture whisked with egg and oil and vanilla. Green food coloring too! Start with a few drops. Check the color and add more if you want it brighter.

Combine Everything

Wet into dry. Pour slow. Stir just until combined. Too much mixing is bad! Lumps are okay.

Cook the Pancakes

Griddle or non-stick pan on medium heat. Little bit of grease. ¼ cup batter per pancake on the griddle. Bubbles on surface means flip time. Other side cooks until brown and golden.

Serve

Pancakes stacked on plate. Whipped cream lots! Sprinkles that are green for St Patrick’s festive.

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups milk or non-dairy alternative
  • 1 tablespoon white vinegar
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • Green food coloring

For the toppings

  • Whipped cream store-bought or homemade
  • Green sprinkles

Instructions
 

  • In a small bowl, combine the milk and vinegar. Let it sit for about 5 minutes to thicken slightly. This will create a buttermilk effect.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the buttermilk mixture, egg, oil, vanilla extract, and a few drops of green food coloring. Adjust the food coloring to reach your desired shade of green.
  • Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix—some lumps are okay.
  • Heat a lightly greased griddle or non-stick pan over medium heat. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Stack the pancakes on a plate. Top with a generous amount of whipped cream and a sprinkling of festive green sprinkles.
