St Patrick’s Green Tea Truffles

Truffles for St Patrick’s! Green ones. With matcha powder is in them which is the oh-so-popular green tea stuff. Fancy tasting. White chocolate goes on the outside. Yes please!

I made these one year for St. Patrcik’s day at work. They are so pretty and also just perfect for gifting too! The green is super bright and fun. Inside tastes creamy like cheesecake (kind of).

Filling takes 20 minutes of ‘hard work’ at most! Then freezer for 30. Dipping and making them pretty is 15 minutes after that. So if you’re ito easy and fun St. Patrick’s day treats or just fancy yourself some green treats, this recipe is just it.

Ingredients

For the truffles:

  • 1 package cream cheese, the 8 oz size, soft
  • 2 cups powdered sugar
  • 2/3 teaspoon matcha powder (green tea powder)
  • 2 teaspoons vanilla
  • Green food coloring, gel type is best

For the coating:

  • 2 ½ cups white chocolate melts or shred white chocolate yourself
  • 1 teaspoon coconut oil if you want smoother drizzle
  • Tiny bit matcha powder for top if you like

About 24 truffles. Work 20 minutes. Freeze 30. Put together 15. Total 1 hour maybe.

How to Do It

Make the Green Filling

Big bowl. Beat cream cheese until smooth. No lumps allowed!

Powdered sugar goes in slow. Matcha powder too and vanilla. Mix until everything is smooth and combined.

Green food coloring now! Just a few drops first. Mix and look at the color. More if you want brighter. St Patrick’s Day should be really green I think.

Scoop into small balls. One inch around is good. Rack or parchment paper on a baking sheet. Freeze 30 minutes at least. Firm or dipping is a mess.

Make the White Chocolate Coating

White chocolate melts in a microwave bowl. Stir it every 30 seconds. Don’t make it too hot or it gets clumpy and weird!

Green drizzle on top? Save some chocolate and add green coloring to it. Drops at a time until you like the green.

Dip and Decorate

Frozen balls come out now. Fork works or toothpick or a dipping tool thing. Dip each ball in white chocolate. Extra drips off. Coated truffles go back on rack or parchment. All of them.

Matcha powder sprinkle? Do it now while warm. Sticks way better.

Using green chocolate for drizzle? Spoon goes in the green chocolate. Zig-zag over truffles. Fancy looking!

Chocolate has to set all the way. Room temperature is fine or fridge for faster.

Ingredients
  

For the truffles

  • 1 package 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2/3 teaspoon matcha powder
  • 2 teaspoons vanilla extract
  • Green food coloring gel works best

For the coating

  • 2 ½ cups white chocolate melts or shredded white chocolate
  • 1 teaspoon coconut oil optional, for smoother drizzle
  • to garnish: a pinch of matcha powder optional

Instructions
 

For the green filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the powdered sugar, matcha powder and vanilla extract, mixing until well combined and smooth.
  • Add green food coloring, starting with a few drops, and mix until the filling turns a vibrant green. Adjust the color as needed.
  • Scoop the mixture into small balls (about 1 inch in diameter) and place them on a rack or parchment-lined baking sheet. Freeze for at least 30 minutes, or until firm.

For the white chocolate coating

  • Melt the white chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth. Be careful not to overheat the chocolate.
  • If you want to decorate your truffles with green drizzling, reserve some of the melted white chocolate and mix with the green food coloring, adding a few drops each time until you reach your desired shade o green.
  • Remove the green filling balls from the freezer.
  • Using a fork, toothpick or dipping tool, dip each frozen ball into the melted white chocolate, letting the excess drip off. Place the coated truffles back on the rack or parchment paper. Repeat with all the truffles.
  • Optionally sprinkle with a pinch of matcha powder. It helps if the coating is still a bit warm, this way the matcha powder will stick to the surface better.
  • If you are using the green melted chocolate to decorate the truffles, dip a teaspoon into the mixture and drizzle over the truffles in a zig-zag pattern.
  • Let the white chocolate coating set completely, either at room temperature or in the refrigerator for faster results.
